Peanut Butter-Honey Brownies https://www.leah-claire.com/peanut-butter-honey-brownies/ https://www.leah-claire.com/peanut-butter-honey-brownies/#comments Thu, 02 Jul 2015 18:48:25 +0000 http://www.leah-claire.com/?p=5252 I remember being so excited when I put these Peanut Butter-Honey Brownies on my office birthday treat list. I couldn’t wait for someone to choose them. Brownies are so good by themselves, but when you put goodies on top, even better! I’ve had brownies topped with peanut butter before, but never a peanut butter and honey mix. Top that off with more chocolate and boom! What a decadent dessert made easy! Tilapia with Fennel-Yogurt Sauce & Red Pepper Couscous https://www.leah-claire.com/tilapia-fennel-yogurt-sauce-red-pepper-couscous/ https://www.leah-claire.com/tilapia-fennel-yogurt-sauce-red-pepper-couscous/#comments Wed, 10 Sep 2014 15:13:14 +0000 http://www.leah-claire.com/?p=4323 I’m coming off of 10 days of glorious vacation! It’s a little challenging to get back into the swing of things with getting up early for work, getting ready for work, driving to work, being at work. Sensing a theme here? Yeah, I’m happy to be employed, but I sure do miss being on my own schedule, which most days didn’t include wearing makeup or heels. Getting used to my work schedule isn’t the only thing challenging me. It’s also going back to not eating the house down. No more Doritos, no more Devil Squares. Luckily I’ve got this fantastic, low calorie dinner that tastes like I’m still on vacation. This Tilapia with Fennel-Yogurt Sauce paired with Red Pepper Couscous makes me feel like I’m still splurging, but is much kinder to my hips than all those Doritos! Peanut Butter & Banana Wraps https://www.leah-claire.com/peanut-butter-banana-wraps/ https://www.leah-claire.com/peanut-butter-banana-wraps/#comments Mon, 04 Aug 2014 14:47:32 +0000 http://www.leah-claire.com/?p=4201 Today’s post is brought to you by the letter R and the number 2. Ha! I don’t have kids or nieces/nephews, or any young uns for that matter, but it doesn’t stop me from making awesome kid snacks…because they taste so darn yummy! I’ve been making these Peanut Butter & Banana Wraps for years. They are so good, even though it’s the simplest idea for a snack or dessert. They take no time to make and you probably have most of the ingredients on hand already. Full of different textures, one of these wraps will satisfy your craving for something sweet. They’re on the messy side, but I think that’s the sign of a good treat. 🙂 Read more on Peanut Butter & Banana WrapsCopyright © 2009-2020 Leah Claire - Leah Claire

Beer-Brined Barbecue Chicken https://www.leah-claire.com/beer-brined-barbecue-chicken/ https://www.leah-claire.com/beer-brined-barbecue-chicken/#comments Mon, 21 Jul 2014 14:16:01 +0000 http://www.leah-claire.com/?p=4155 Summer, of course, is always a great time to grill. I’m not a master of the grill by any means, so I love when I go to my mom’s house and she can take over. One of these days I’m going to get my learnin’ on, but for now I enjoy tackling the sides (like this Ranchero Corn) and letting her handle the main dish. This Beer-Brined Barbecue Chicken was something I was really looking forward to. Meat that has been brined is so tender and flavorful, plus this one gets slathered in a homemade barbecue sauce while it grills. Soba Noodle Salad https://www.leah-claire.com/soba-noodle-salad/ https://www.leah-claire.com/soba-noodle-salad/#comments Mon, 10 Mar 2014 15:32:14 +0000 http://www.leah-claire.com/?p=3354 I adore Giada De Laurentiis. Giada at Home is one of the few Food Network shows I still watch and I loved Everyday Italian. I couldn’t wait to get my hands on her latest cookbook, Giada’s Feel Good Food: My Healthy Recipes and Secrets. Plus I’m a sucker for any cookbook that lists nutrition information. I was a tad bit disappointed in the cookbook overall because I had to thumb through it several times to find a recipe that I really wanted to make. Out of the entire cookbook, only about five appealed to me. This Soba Noodle Salad stood out because of the dressing ingredients. Almond butter, soy sauce, lime, honey, ginger, wasabi. I had to have it! Read more on Soba Noodle SaladCopyright © 2009-2020 Leah Claire - Leah Claire

I took these pics with my phone, so excuse the quality, although I’m not sure my fancy camera would have done any better with this chocolate blob. I was super excited about this Pumpkin Spice Cake with Chocolate Pecan Filling. It combines the best of three worlds in holiday baking: pumpkin, pecans, and chocolate. Getting it to look as good as the Food Network’s version proved to be quite the unachievable feat. Spiced Honey https://www.leah-claire.com/spiced-honey/ https://www.leah-claire.com/spiced-honey/#comments Mon, 19 Aug 2013 14:09:42 +0000 http://www.leah-claire.com/?p=2015 I’ve had this Ball Blue Book of Preserving on my shelf for several years now. Have I ever canned anything? No. Does this post include something I’ve canned? No. I think you have to be in a “mood” to can, and I certainly wasn’t. I’ll tackle it eventually, but what I really like about this book are all the spreads and dips that are also included. Easy condiments you can whip up without having to deal with the canning process (unless you’re making huge batches). Spiced Honey caught my eye because it was easy, sounded really delicious, and could potentially be something to give as a gift for the holidays or just because. Life-changing almost. Yes, it appears to be nothing special, but this Veggie Melt is in a category all by itself. When I saw it in a cookbook I checked out from the library, I knew it was going to be the first recipe I’d make out of it. It’s vegetarian, and packed with outstanding flavor. I’m also newly obsessed with Genesis bread. It’s sprouted whole grain and seed bread and it’s fantastic. Hearty, crunchy, and guess what? You can pronounce every single ingredient. No processed crap, no weird preservatives. This bread is living. You’ll find it in your grocer’s freezer, not the bread aisle. It’s pricier than most bread, but well worth it! And on this sandwich? Man, oh man. You have to make it! Read more on Veggie MeltCopyright © 2009-2020 Leah Claire - Leah Claire
