Oh, hi! (waves) Yep, I know it’s January and we’re all thinking about eating healthier, but I want to talk about cookies! As most of you know, my mom and I bake several batches of cookie each year known as Cookie Baking Day. It’s a super fun tradition and this year we got fancy with matching aprons and Christmas pins. We’re adorkable. 🤓 So, enjoy your celery sticks, but bookmark these Eggnog Cookie Logs for next year. I’m not a huge fan of drinking eggnog, but anything flavored eggnog is fair game. We first made these cookies years ago, long before I had a blog, and they were the one cookie for which I had recipe requests.

They can be a bit tedious to make since you have to roll out the dough, but once you get going, it’s not such a big deal. The cookies are barely sweet, which I love because that makes the frosting perfectly suited for them. They taste great without it, but that bump of sweet frosting really gives it a nice flavor. Plus it’s double nutmeg with some in the cookie and some sprinkled on top. If you didn’t want to bother with the log shape, you could definitely use a cookie scoop and bake them in rounds. Perfect for the holidays with a big cup of cocoa!

Instead of me guessing what they would like, I created “The List.” It’s a list of about 20 or so desserts, with descriptions, they can choose from. No one sees The List until their birthday comes up. You’re not allowed to share what’s on the list, but the birthday person can choose whether or not to share what they picked. Once a dessert is chosen, it’s off the list, no repeats. It makes it fun and special when it’s birthday time! My boss chose these Sopapilla Cheesecake Bars and I was so glad he did. Merry Christmas!

This is such a classic cookie in general, but I love to make M&M’s Cookies with the red and green M&M’s for the holidays. Way back in the day when mom and I started making Christmas cookies, these were always on the list. You know how I like to change up the list every year and make new varieties, so I didn’t give them much thought…until this year. Wow, I really did forget how darn delicious they are! It’s that brown sugar in the recipe that does the trick I think. I also love that candy crunch. This cookie just might make the list every year from now on.

I can’t help it, it’s catchy! You’re welcome for the ear worm. 😉 This was our dessert after eating Beer-Brined Barbecue Chicken and Ranchero Corn on the 4th. I really couldn’t wait to dive in, but oh did we have to wait. I’ve mentioned a million times before how I’m notorious for not reading through a recipe until I’m actually making it. (You’d think I would learn my lesson by now.) So yeah, didn’t see that whole part about “chill four hours” until I was in the thick of making pie. So I made the pie and let it chill overnight because it was crazy late already. What torture! I’m telling you it was worth the wait and then some. It starts with a pecan shortbread crust speckled with coconut. Next is a gooey, thick layer of pineapple filling. On top of that is a coconut cream cheese layer.
