I’m always on the lookout for new recipes (other than risotto, which by the way I need to blog that recipe!) and I found this Plum Chili Chicken in The Essential Instant Pot Cookbook. The downside to an Instant Pot is that a lot of recipes are soups and stews, or heartier foods that I’m not in the mood for during the heat of the summer. I was thrilled with this Plum Chili Chicken because it had a ton of flavor and is served with rice and broccoli. Perfect for summer when you don’t want to be stuck over a hot stove! The recipe could not be easier. Mix together the sauce ingredients, place sauce and chicken in Instant Pot, let IP do it’s thing. It’s plum jam, water, soy sauce, sambal oelek, ginger, green onions, and garlic. If you can’t find plum jam, apricot jam would work nicely here, too. Plum Chili Chicken

The recipe could not be easier. Mix together the sauce ingredients, place sauce and chicken in Instant Pot, let IP do it’s thing.

Plum Chili Chicken

It’s plum jam, water, soy sauce, sambal oelek, ginger, green onions, and garlic. If you can’t find plum jam, apricot jam would work nicely here, too.

Plum Chili Chicken

I sliced the chicken into bite-sized pieces and poured the sauce over it, so it would really be coated and flavorful. Serve over rice with broccoli or try it with some spiralized veggies! The recipe isn’t very spicy as is, so feel free to add more sambal oelek, sriracha, or hot sauce to the finished dish if you like it spicy!

Walnut-Topped Ginger Drops https://www.leah-claire.com/walnut-topped-ginger-drops/ Tue, 22 Jan 2019 14:25:15 +0000 https://www.leah-claire.com/?p=6370 These Walnut-Topped Ginger Drops were the surprise favorite from Cookie Baking Day 2018. I chose this recipe because I like to have a good variety of cookies, or else I end up with all chocolate! I thought these were so unique with the candied ginger and cardamom. The cookies are almost cake-like and barely sweet, so the touch of vanilla chip drizzle on top is perfect. I wasn’t sure if these would appeal to everyone, but they were the #1 cookie that my coworkers talked about! What I really love about these cookies is how they are decorated. The one walnut on top with the drizzle looks so cool to me. It was hard finding whole walnut halves, but it can be done! If all you have are walnut pieces, those would look just fine on top. You could also substitute pecans or almonds for the walnuts. Another fun decorating twist is to color the vanilla baking chips. With Valentine’s Day coming up, these would be a fantastic dessert with pink drizzle!Read more on Walnut-Topped Ginger DropsCopyright © 2009-2020 Leah Claire - Leah Claire

I swear it was just the other day when we wrapped up Cooking Baking Day 2014 and here I am reporting on what we made this year already! Our 2015 Cooking Baking Day was a few weekends ago and we sure had a blast! It’s getting harder for me to pick out which cookies we make because after five years, we’ve gone through a lot of varieties! I try to have something chocolate, something not chocolate, and something colorful. We always make Cream Cheese Spritz Cookies and this year I promoted these Mint Chocolate Chip Cookies to the annual list. They are so freakin’ good! They deserved it! On my “something not chocolate” list were these Pumpkin Pecan Spice Cookies. I kind of hesitated on them because I feel like by this time of year, everyone is sick of pumpkin spice. I couldn’t resist though. Pecans! Read more on Pumpkin Pecan Spice CookiesCopyright © 2009-2020 Leah Claire - Leah Claire

This Chili-Garlic Shrimp with Coconut Rice and Snap Peas takes under 30 minutes to make! The bonus with this recipe is that you make more shrimp than you need and you can freeze the rest to make this dish again or use in other dishes. This shrimp recipe is one of the best I’ve ever made. It’s spicy from chile paste and sweet from a touch of brown sugar. I could just eat a big bowl of the shrimp by itself! I’ve been stuck in my house since last Sunday thanks to an unreal ice storm plus snow in Nashville. I can finally see parts of my driveway peeking through the ice as it melts more and more. With temps below freezing, all I want is soup. Y’all know my love for odd flavor combinations, so I had to try this Almond Chicken Soup with Sweet Potato, Kale, and Ginger from the Clean Slate cookbook. Yep, it’s not only a big bowl of comfort, but it’s good for you! So, how’s it taste? I was really curious about how almond butter would work in a soup. I’ve had it mixed with savory before in this sandwich, but I couldn’t imagine how it would work in broth. It makes it incredible! The almond butter with the ginger makes this soup phenomenal! The original recipe in Clean Slate called for collard greens, but I subbed kale. Kale really stood up to the soup and didn’t get mushy. I had leftovers from the fridge and froze some as well, and both times the soup was just as good as when I first made it. […]

Almond Chicken Soup with Sweet Potato, Kale, & Ginger

So, how’s it taste?

I was really curious about how almond butter would work in a soup. I’ve had it mixed with savory before in this sandwich, but I couldn’t imagine how it would work in broth. It makes it incredible! The almond butter with the ginger makes this soup phenomenal! The original recipe in Clean Slate called for collard greens, but I subbed kale. Kale really stood up to the soup and didn’t get mushy. I had leftovers from the fridge and froze some as well, and both times the soup was just as good as when I first made it. I loved the texture of the smooth broth with the chunks of chicken and sweet potato. The squeeze of lime at the end brightens the dish. I can’t wait to make this one again!

Almond Chicken Soup with Sweet Potato, Kale, & Ginger

The dishes you see in the pictures above are part of the Martha Stewart Collection white dishware available exclusively at Macy’s. Fantastic dishware for everyday use, plus they’re dishwasher and microwave safe!

Yield: 4 servings

Almond Chicken Soup with Sweet Potato, Kale, & Ginger

Ingredients:

4 cups chicken stock
1/2 yellow onion, finely chopped
1 garlic clove, minced
1 large sweet potato, peeled and finely chopped
8 oz. boneless, skinless chicken breast, cut into 1-inch pieces
1/2 cup smooth almond butter
1 cup chopped, trimmed kale leaves (or collard green leaves)
2 tbsp. minced peeled fresh ginger
coarse salt & freshly ground black pepper
lime wedges, for serving

Directions:

1. Combine stock, onion, garlic, and sweet potato in a stockpot, and bring to a boil. Reduce to a simmer, and add the chicken; cover and simmer 20 minutes.

2. In a bowl, whisk together almond butter and 1/2 cup of hot broth into a thick paste.

3. Add kale (or collard) and ginger to soup; bring to a boil, reduce heat and simmer, covered, 5 minutes. Stir in almond butter paste. Season with salt and pepper. Serve soup immediately with lime wedges.

*Nutrition based on using collards, not kale.

I always try to have a signature cocktail and this year was no different, although I think I made the best one yet! I picked Crimson Spice Champagne Cocktail for a few reasons. One, I was really curious about making a syrup from cranberry juice cocktail and wanted to see how it would turn out with the aromatics. Two, I’ve never used star anise. Three, the Iron Bowl was Thanksgiving weekend and well, the name and color just kind of fit. 😉 Read more on Crimson Spice Champagne CocktailCopyright © 2009-2020 Leah Claire - Leah Claire

The second I saw this pie, I knew I’d make it for Thanksgiving. It’s almost a little Halloweenish with it’s black and orange swirls, but oh so perfect for the biggie holidays, too. This Pumpkin Brownie Swirl Pie served warm with a scoop of really good vanilla ice cream is heaven. The brownie is the crust and the top is both swirled together. No matter where I am drinking one, even if it’s on my couch, I feel like I’m somewhere special having a grand time. It could be simple like my go to Jack & Coke, or you can get fancy, like this Ginger Julep! I adore mint juleps and this one takes that classic drink and spices it up with ginger. There’s also a touch of orange juice to round out the flavors. The drink starts by making your own ginger-mint syrup. It’s really quite easy to make simple syrups and the flavor possibilities are endless. This one has mint, ginger, and orange peel. Once your syrup is ready and cooled, pour it in a glass with orange juice and good bourbon. Garnish with crushed ice and more mint and you’ve got one fancy cocktail!
