It’s cocktail time on a Wednesday! I’m still grinning from ear to ear thinking about my recent trip to New York City, so since I’m in a great mood, let’s talk about booze! We had this Cherry Limeade Cocktail during the holidays, but its flavors would also work great on upcoming warmer days. Anyone else so ready for Spring? Iced cake vodka, fresh lime juice, cherry juice, and Sprite. It’s simple, slightly sweet, slightly tart, and dangerously delicious.

Chocolate-Covered Cherry Cookies

You know those candies that come out over the holidays? That’s right, I’m talking about chocolate covered cherries! Sweet maraschino cherries covered in fondant and enveloped in chocolate. I’ve even seen a blueberry version, too. This is such a classic holiday candy for me. I love going to stores and seeing the boxes everywhere. Biting into one is a messy, gooey, sweet treat. I could make myself sick eating an entire carton! That’s why I couldn’t wait to make these Chocolate-Covered Cherry Cookies. They are just like the candy, but in cookie form and not quite as messy.

Warm Brown Rice and Chickpea Salad with Cherries and Goat Cheese

This Warm Brown Rice and Chickpea Salad with Cherries and Goat Cheese may sound a bit unusual, but it’s fantastic. I really wanted to make it with Rainier cherries, but I don’t think they’re quite in season yet. You could make this with any kind of cherry, but I opted for dried cherries. I can’t wait to make this again with fresh Rainiers! I made this salad twice, tweaking the recipe just a bit each time. Just small changes made it a different salad, but I loved both versions. Using a precooked pouch of brown rice makes this a cinch to get on the table. Perfect for when you’re busy and don’t want to fire up the stove, but want something homemade.

Punch Bowl Cake

Saturday was a rainy, dreary day here in Nashville. Perfect for baking, if you ask me! This cake is long overdue for an appearance on the blog. Punch Bowl Cake has a lot of history in my family. My mom would make this cake for my Papa’s birthday and we’d have it for holidays, too. I’ve made it a few times as an adult and it brings back so many memories. It also helps that it’s quite delicious with not much work to put it together.
