I had good intentions to make this dish this weekend since you were kind enough to share the recipe with me early, but didn’t have a couple of the ingredients on hand so gotta get those this week.

I have some soy chorizo in the freezer so think I may try to use it to make this a completely meatless dish. Not sure it’s going to give it the right texture though because it might not crisp up as well. Fingers crossed!
