I made them the morning of and waited until the last minute to stuff them. They were fine for the late afternoon shower. I wouldn’t make them the night before though. I think they do have the potential to make the bread soggy.

Big (literally) mistake on my part. Definitely use the baguette bread. It turned out great but the servings were too much bread. Great way to serve veggies, though, and would do again. Made ahead of time( 2 hrs) and covered with plastic wrap.
