But I do it pretty much the same way as Sarah mentioned above.

I can commiserate with the neck burn, though. My first day working in a big industrial kitchen (with Riffs!) I pulled a cookie sheet, hot, from a high rack in the oven and slid it STRAIGHT onto my neck. Oof. Painful and embarrassing.

It doesn’t splatter at all!
