I loooove mashed potatoes (who doesn’t?!) + this version looks so good. I’ve added cream cheese to my mashed potatoes before, but never goat cheese. That is brilliant! I bet these are sooo delicious.

I’ve totally had mashed potatoes for dinner before, too! They’re just so good! I’m loving your goat cheese version, Leah! I’ve never thought to add this kind of cheese, sounds delicious! Sounds so creamy and full of flavor!
